This question has absolutely nothing to do with my plans to turn up to HonorCon 2018 in an Honor-esque Grayson gown in Havenite colors. Nothing at all.
The closest thing I can think of that is textev that refers to Grayson female head covering is hats. Honor adopted that custom with a wide-brimmed hat that has the right (left?) brim curved up and attached(?) to the side to allow clearance for Nimitz to sit. I believe it resembles the Aussie hats seen in the second image here:

With that sort of textev, I would say that Grayson women do not cover their hair/heads as part of their religion, but wear hats as a part of fashion. My guess would be that the hats are just as extravagant as their dresses, but since you are going for a more understated, Honor-like look, you might be able to get away with one like in the image.
IMO, if Grayson women were required to wear head-covering, DW would have specifically mentioned it.
