While a 10 m/s^2 'standard g' would make sense, it's pretty clear that, like with the Standard calendar, humanity has stuck with Earth as the yardstick. If anything, I think they'd more likely to redefine the metre so that 1m/s^2 acceleration is 0.1g, though everyone seems to be doing fine as they are.

Wouldn't a 'standard' G in the Honorverse be the measurement of gravity at sea level on planet Earth, the same as with 'standard' time measurement units?

Yes, it is. The 10 m/s^2 they are talking about is an approximation which is sufficient for the kind of back-of-the-envelope calculations thrown around on the forums.

I'm thinking that the HonorVerse probably standardized at the "magnitude 10" level even pre-Diaspora, instead of the "9.81 for 1G" because that's WAY easier to communicate over the centuries in terms of time/velocity/distance calculations, etc. Thoughts?

As I checked equations 580 G is a little less than 5,78 km^s
