Every other Weber books / series I have read have been a great read and a comprise a completed fiction novel independently of the other books in the series.
The last two Safehold books do not stand alone and there is no indication when the completion of the story in train will come to any conclusion. I dislike paying good money for a partial novel that just leaves me frustraded
Are any other recent David Weber books like this?

I don't think that any of the Safehold books can stand alone, except for the first. But that doesn't mean they aren't complete novels. I would say that both the most recent Safehold books are "complete novels".

The pace of the recent events in the universe are accelerating, and the scope is expanding. Perhaps that is what leads to your perception. Personally, I like that. I don't share your opinion, but that doesn't invalidate your opinion. I'm sorry to hear that you find the most recent books unsatisfying. It's a matter of taste, I think.
