I'm not sure how effective that would be. There are multiple levels of Hyperspace where a mousetrap force could be hiding and sensor ranges are limited in Hyper. Also, the circumstances that make a mousetrap force viable -- foreknowledge of a probable attack -- would make scouting extremely dangerous. Extremely paranoid commanders might scout the Alpha band but the rest probably would consider it a waste of time. The conditions that would make it necessary just don't happen that often. .
